Caerphilly was historically the lunch of Welsh coal miners because it replenished their salt supplies after a long, hard day in the mines. Because of the British war rationing that required all available milk be made into cheddar cheese, the production of Caerphilly was banned during World War II and its future production was severly jeopardized. Thankfully the recipe was preserved so that this delightful cheese can still be made today.
